
Avocado Cauliflower Toast

Ingredients
- 1/2 head of cauliflower riced (or 1 1/2 cups Trader Joe's refrigerated pre-riced cauliflower)
- 3 eggs
- 1 teas. garlic powder
- Salt & pepper
- 1 Tble. coconut oil for frying
- 1 avocado, peeled, pitted & mashed; mix in a spritz of lemon juice & sea salt.
- Pinch of pepper flakes
Instructions
- Grate the cauliflower using a food processor or box grater.
- Mix thoroughly with 1 egg, garlic powder, salt & pepper.
- In a large skillet over medium heat, heat the coconut oil and scoop out 2 large (or 4 small) scoopfuls of the cauliflower mixture.
- Form to create pancake-like rounds and flip when golden.
- Transfer to a plate and then fry the eggs in the same pan.
- Spread the mashed avocado onto the cauliflower toast and sprinkle with pepper flakes.
- Top with fried egg.
Notes
- Alternative to avocado - arugula tossed with olive oil, lemon juice, salt and pepper topped with an egg.
